On Labor Day, we cooked over 90 racks of ribs which were sold by Albertson's Market as an in-store Labor Day promotion. Ribs were sold out by 6:00 pm, with sales starting at 10:00 am. We were at Albertson's at 6:00 am to load the smoker with ribs. When the first batch came off at 10:00 am, we loaded the pit again so there would be ample ribs to sell throughout the afternoon.
